- 2 teaspoons instant yeast
- 1.25 cups water
- 0.25 cup olive oil
- 2 tablespoons olive oil
- 1 cup seedless grapes
- 2 tablespoons za’atar
- 1 teaspoon kosher salt
- 0.25 teaspoon flaky salt
Cooking instructions
- Combine the flour, yeast, and kosher salt in a large bowl. Add the water and 1/4 cup olive oil, then mix until a shaggy dough forms. Knead in the bowl for 3 minutes until cohesive and slightly elastic. (about 5 min)
- Cover the bowl and let the dough rise in a warm, draft-free place until doubled in size, about 60 to 90 minutes. (about 90 min)
- Pour 1 tablespoon olive oil into a 9-by-13-inch baking pan. Transfer the dough to the pan and gently stretch it toward the corners. Cover and let it rise for 30 minutes. (about 30 min)
- Heat the oven to 425°F. (about 10 min) — 425°F
- Press deep dimples across the dough with your fingertips. Drizzle with the remaining 1 tablespoon olive oil, then scatter the grapes, za’atar, and flaky salt over the surface. (about 5 min)
- Bake until the focaccia is puffed and deeply golden, the grapes are wrinkled, and the center reaches at least 190°F, about 22 to 25 minutes. (about 25 min) — 425°F
- Let the focaccia rest in the pan for 10 minutes before slicing and serving warm or at room temperature. (about 10 min)
