Ingredients
- 12 oz italian sausage
- 1 lb potatoes
- 4 cups chicken broth
- 3 cups kale
- 0.5 medium onion
- 2 cloves garlic
- 0.5 cup heavy cream
- 1 tablespoon olive oil
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
Cooking instructions
- Heat the olive oil in a large pot over medium heat. Add the Italian sausage and cook, breaking it into small pieces, until browned and the center reaches 160°F (71°C), about 6 to 8 minutes. Transfer the sausage to a plate, leaving the rendered fat in the pot. (about 8 min) — Medium heat
- Add the onion and cook until softened, about 4 minutes. Add the garlic and stir for 30 seconds, just until fragrant. (about 5 min) — Medium heat
- Add the potatoes and chicken broth. Bring to a boil, then reduce the heat and simmer until the potatoes are fork-tender, about 12 to 15 minutes. (about 15 min) — Simmer
- Return the sausage to the pot. Stir in the kale and simmer until the kale is tender, about 3 minutes. (about 3 min) — Simmer
- Reduce the heat to low and stir in the cream, salt, and black pepper. Warm gently for 2 minutes without boiling, then serve hot. (about 2 min) — Low heat
