Ingredients
- 1.5 lb boneless, skinless chicken thighs
- 1 medium apple
- 1 medium yellow onion
- 1 cup apple cider
- 1 tbsp dijon mustard
- 1 tsp dried thyme
- 1 tbsp olive oil
- 1 tsp kosher salt
- 0.5 tsp black pepper
- 0.5 cup chicken broth
Cooking instructions
- Pat the chicken thighs dry and season both sides with the salt and pepper. (about 2 min)
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken and sear for 4 to 5 minutes per side, until well browned. Transfer the chicken to a plate. (about 10 min) — Medium-high heat
- Add the sliced apple and onion to the skillet. Sauté for 4 to 5 minutes, stirring occasionally, until the onion softens and the apple begins to brown. (about 5 min) — Medium heat
- Pour in the apple cider and chicken broth, then stir in the Dijon mustard and thyme, scraping up any browned bits. (about 2 min) — Medium heat
- Return the chicken and any juices to the skillet. Simmer uncovered for 10 to 12 minutes, turning once, until the thickest pieces reach 165°F (74°C) on an instant-read thermometer and the sauce slightly thickens. (about 12 min) — Gentle simmer
- Remove the skillet from the heat and let the chicken rest for 5 minutes before serving with the apples, onions, and sauce. (about 5 min)
