Prep: 15 min · Cook: 35 min · Yield: 6 · Method: Stovetop
Ingredients
- 1 lb ground turkey
- 2 medium sweet potatoes
- 2 15-ounce cans beans
- 28 oz diced tomatoes
- 2 cups chicken broth
- 2 tbsp chili powder
- 1 medium yellow onion
- 3 cloves garlic
- 1 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp kosher salt
- 0.5 tsp black pepper
Cooking instructions
- Peel and cut the sweet potatoes into 1/2-inch cubes. Dice the onion and mince the garlic. Drain and rinse the beans. (about 10 min)
- Heat the olive oil in a large pot over medium heat. Add the ground turkey and cook, breaking it up, until no longer pink and it reaches 165°F (74°C), about 6 to 8 minutes. (about 8 min) — Medium heat
- Add the onion and cook until softened, about 4 minutes. Stir in the garlic, chili powder, cumin, salt, and pepper; cook for 30 seconds. (about 5 min) — Medium heat
- Stir in the sweet potatoes, beans, tomatoes, and broth. Bring the chili to a boil. (about 5 min) — Medium-high heat
- Reduce the heat to medium-low, cover partially, and simmer for 30 to 35 minutes, stirring occasionally, until the sweet potatoes are fork-tender and the chili thickens. (about 35 min) — Medium-low heat
- Taste and adjust the seasoning. Simmer uncovered for a few additional minutes if a thicker chili is desired, then serve hot. (about 2 min) — Medium-low heat
