Prep: 10 min · Cook: 30 min · Yield: 6 · Method: Stovetop
Ingredients
- 1.5 lb boneless, skinless chicken breasts
- 1.5 cups orzo
- 3 cups low-sodium chicken broth
- 1 cup cottage cheese
- 0.5 cup parmesan cheese
- 2 cups baby spinach
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon italian seasoning
- 1 teaspoon kosher salt
- 0.5 teaspoon black pepper
Cooking instructions
- Pat the chicken dry. Season both sides with garlic powder, Italian seasoning, ½ teaspoon salt, and pepper. (about 3 min)
- Heat the olive oil in a large deep skillet over medium-high heat. Sear the chicken for 4 to 5 minutes per side, until browned and the thickest part reaches 165°F. Transfer the chicken to a plate. (about 10 min) — Medium-high
- Add the orzo and broth to the skillet. Bring to a boil, then reduce heat and simmer uncovered for 10 to 12 minutes, stirring occasionally, until the orzo is tender and most of the broth is absorbed. (about 12 min) — Simmer
- Blend the cottage cheese until smooth. Reduce the skillet heat to low and stir in the blended cottage cheese and Parmesan until creamy. (about 3 min) — Low
- Stir in the spinach until wilted. Slice the chicken, return it to the skillet with any accumulated juices, and cook until heated through. (about 2 min) — Low
- Rest for 2 minutes, then serve warm. (about 2 min)
