Ingredients
- 1 lb ground beef
- 8 oz short pasta
- 2 cups beef broth
- 1 cup salsa
- 1 tbsp taco seasoning
- 1 cup cheddar cheese
- 0.5 medium yellow onion
- 2 cloves garlic
- 1 tsp vegetable oil
Cooking instructions
- Heat the oil in a large deep skillet over medium-high heat. Add the onion and cook until softened, about 3 minutes. Add the garlic and cook for 30 seconds. (about 4 min) — Medium-high heat
- Add the ground beef and taco seasoning. Cook, breaking it into small pieces, until browned and the center reaches 160°F (71°C), about 6 to 8 minutes. Drain excess fat if needed. (about 8 min) — Medium-high heat
- Stir in the pasta, broth, and salsa. Bring to a boil, then reduce the heat to medium-low. Cover and simmer, stirring occasionally, until the pasta is tender and most of the liquid is absorbed, about 10 to 12 minutes. (about 12 min) — Medium-low heat
- Remove the skillet from the heat. Stir in the cheddar until melted and evenly distributed. Let the pasta rest for 2 minutes before serving. (about 2 min)
