Prep: 10 min · Cook: 30 min · Yield: 4 · Method: Stovetop
Ingredients
- 12 oz short pasta
- 12 oz italian sausage
- 3 cups chicken broth
- 1 cup pumpkin puree
- 0.5 cup heavy cream
- 0.5 cup parmesan cheese
- 1 small yellow onion
- 2 cloves garlic
- 1 tablespoon olive oil
- 0.5 teaspoon kosher salt
- 0.25 teaspoon black pepper
- 0.5 teaspoon ground sage
Cooking instructions
- Heat the olive oil in a large pot over medium heat. Add the sausage and cook, breaking it into small pieces, until browned and the center reaches 160°F (71°C), about 6 to 8 minutes. (about 8 min) — Medium heat
- Add the onion and cook until softened, about 4 minutes. Stir in the garlic, sage, salt, and pepper, and cook for 30 seconds. (about 5 min) — Medium heat
- Pour in the broth and scrape up any browned bits. Stir in the pasta, bring to a boil, then reduce to a steady simmer. Cook uncovered, stirring often, until the pasta is nearly tender and most of the broth is absorbed, following the pasta package timing. (about 12 min) — Simmer
- Stir in the pumpkin puree and cream. Simmer gently until the sauce coats the pasta and the pasta is fully tender, about 3 minutes. (about 3 min) — Low simmer
- Remove the pot from the heat and stir in the Parmesan until melted and glossy. Let the pasta rest for 2 minutes before serving. (about 2 min) — Off heat
