Cooking instructions

  1. Place a pizza stone or inverted baking sheet in the oven and preheat to 475°F. Let the dough sit at room temperature while the oven heats. (about 30 min) — 475°F
  2. Heat the olive oil in a skillet over medium-high heat. Add the mushrooms, garlic, salt, pepper, and thyme. Sauté for 6 to 8 minutes, stirring occasionally, until the mushrooms are browned and their liquid has evaporated. (about 8 min) — Medium-high heat
  3. On a sheet of parchment sprinkled with cornmeal, stretch the dough into a 12-inch round. Spread the ricotta over the surface, leaving a 1-inch border. Scatter the Gruyère and sautéed mushrooms over the top. (about 5 min)
  4. Transfer the parchment and pizza to the heated stone or baking sheet. Bake for 10 to 12 minutes, until the crust is crisp and golden and the cheese is melted and bubbling. (about 12 min) — 475°F
  5. Rest the pizza for 3 minutes, then slice and serve hot. (about 3 min)
