Prep: 15 min · Cook: 30 min · Yield: 4 · Method: Stovetop
Ingredients
- 12 oz chicken sausage
- 2 apples
- 1 medium yellow onion
- 1 lb potatoes
- 1 cup sharp cheddar cheese
- 2 tbsp olive oil
- 1 tsp fresh thyme
- 0.75 tsp kosher salt
- 0.25 tsp black pepper
- 0.25 cup water
Cooking instructions
- Heat the olive oil in a large covered skillet over medium-high heat. Add the potatoes, salt, and pepper, then cook for 8 to 10 minutes, stirring occasionally, until browned on several sides. (about 10 min) — Medium-high heat
- Add the sliced chicken sausage and cook for 4 to 5 minutes, turning occasionally, until browned and heated through. If the sausage is raw, continue cooking until it reaches 165°F (74°C) internally. (about 5 min) — Medium-high heat
- Stir in the onion, apples, thyme, and water. Cook for 2 minutes, scraping up any browned bits from the skillet. (about 2 min) — Medium heat
- Cover the skillet and cook for 8 to 10 minutes, stirring once, until the potatoes are fork-tender and the onion and apples are soft. (about 10 min) — Medium-low heat
- Sprinkle the cheddar evenly over the skillet. Cover and cook for 2 to 3 minutes, until the cheese is fully melted. (about 3 min) — Low heat
- Remove the skillet from the heat and let it rest, covered, for 2 minutes before serving. (about 2 min)
