- 1 15-oz can black beans
- 1 oz packet taco seasoning
- 1.5 cups water
- 1 small yellow onion
- 2 cloves garlic
- 1 tablespoon olive oil
- 1 lime
Cooking instructions
- Heat the olive oil in a large lidded skillet over medium heat. Add the diced onion and cook until softened, about 3 minutes. Add the garlic and cook for 30 seconds. (about 4 min) — Medium heat
- Add the ground beef and cook, breaking it into small pieces, until no pink remains and it reaches 160°F on an instant-read thermometer, about 6 to 8 minutes. Drain excess fat if needed. (about 8 min) — 160°F
- Stir in the rice and taco seasoning. Cook for 1 minute, stirring constantly, to coat the rice. (about 1 min) — Medium heat
- Add the undrained tomatoes, drained black beans, and water. Stir, bring to a boil, then reduce the heat to low. (about 4 min) — Low simmer
- Cover and simmer for 18 to 20 minutes, until the rice is tender and the liquid is absorbed. Remove from the heat and let stand covered for 5 minutes. (about 25 min) — Low heat
- Fluff the rice mixture with a fork and squeeze lime juice over it before serving. (about 1 min)
