Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 cup orzo
- 1 cup cottage cheese
- 0.333 cup parmesan cheese
- 2 garlic cloves
- 2 cups chicken broth
- 1 tablespoon olive oil
- 0.75 teaspoon kosher salt
- 0.25 teaspoon black pepper
- 1 teaspoon italian seasoning
Cooking instructions
- Cut the chicken into bite-size pieces. Season with the salt, black pepper, and Italian seasoning. (about 5 min)
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook, stirring occasionally, until the thickest pieces reach 165°F (74°C), about 6 to 8 minutes. Transfer the chicken to a plate. (about 8 min) — Medium-high heat
- Mince the garlic. Add it to the same skillet and cook for 30 seconds, stirring constantly. (about 0.5 min) — Medium heat
- Add the orzo and chicken broth. Bring to a simmer, then cook uncovered, stirring often, until the orzo is tender and most of the broth is absorbed, about 10 to 12 minutes. (about 12 min) — Simmer
- Blend the cottage cheese and Parmesan until smooth. (about 2 min)
- Reduce the heat to low. Stir the blended cheese mixture and cooked chicken into the hot orzo until creamy and warmed through, about 2 minutes. Serve hot. (about 2 min) — Low heat
