Ingredients
- 1 lb ground beef
- 1 cup long-grain white rice
- 2 medium yellow onions
- 2 cups beef broth
- 1 cup gruyère cheese
- 1 tablespoon olive oil
- 1 teaspoon fresh thyme leaves
- 1 teaspoon kosher salt
- 0.5 teaspoon black pepper
Cooking instructions
- Heat a large deep skillet over medium-high heat. Add the ground beef and cook, breaking it into crumbles, until browned and the thickest pieces reach 160°F, about 7 to 9 minutes. Transfer the beef to a bowl, leaving the drippings in the skillet. (about 9 min) — Medium-high heat; beef reaches 160°F
- Reduce the heat to medium and add the olive oil. Add the onions, thyme, salt, and pepper. Cook, stirring often, until the onions are deeply golden and soft, 15 to 18 minutes. (about 18 min) — Medium heat
- Stir the rice into the onions and cook for 1 minute. Pour in the broth and return the beef to the skillet. Bring to a simmer. (about 3 min) — Simmering
- Cover, reduce the heat to low, and simmer until the rice is tender and the broth is absorbed, 18 to 20 minutes. Remove from the heat and let stand, covered, for 5 minutes. (about 25 min) — Low heat
- Uncover and sprinkle the Gruyère evenly over the rice. Cover again for 2 to 3 minutes, until the cheese melts, then serve hot. (about 3 min) — Residual heat
