Ingredients
- 1 lb boneless, skinless chicken breast
- 2 tbsp olive oil
- 1 small yellow onion
- 2 cloves garlic
- 1 tsp kosher salt
- 0.5 tsp black pepper
- 1 cup orzo
- 1 cup pumpkin purée
- 2 cups chicken broth
- 0.5 cup heavy cream
- 1 tbsp fresh sage
- 0.5 cup parmesan cheese
Cooking instructions
- Cut the chicken into 1-inch pieces. Season with ½ teaspoon salt and the black pepper. (about 5 min)
- Heat the olive oil in a large deep skillet over medium-high heat. Add the chicken and cook, stirring occasionally, until the thickest pieces reach 165°F on an instant-read thermometer, about 6 to 8 minutes. Transfer the chicken to a plate. (about 8 min) — 165°F
- Add the onion to the skillet and cook until softened, about 3 minutes. Stir in the garlic and cook for 30 seconds. (about 4 min) — Medium heat
- Stir in the orzo, pumpkin purée, chicken broth, and remaining ½ teaspoon salt. Bring to a simmer, then cook uncovered, stirring often, until the orzo is tender and most of the liquid is absorbed, about 10 to 12 minutes. (about 12 min) — Simmer
- Stir in the cream, sage, Parmesan, and cooked chicken. Simmer gently until hot and creamy, about 2 minutes. (about 2 min) — Low heat
- Remove from the heat and let the orzo rest for 2 minutes before serving. (about 2 min)
