Prep: 10 min · Cook: 15 min · Yield: 4 · Method: Stovetop
Ingredients
- 1 cup cottage cheese
- 2 large eggs
- 1 cup old-fashioned oats
- 1 teaspoon ground cinnamon
- 1 teaspoon baking powder
- 1 medium apple
- 2 tablespoons maple syrup
- 1 tablespoon butter
Cooking instructions
- Add the cottage cheese, eggs, oats, cinnamon, baking powder, and maple syrup to a blender. Blend until smooth, scraping down the sides once if needed. (about 2 min)
- Grate the apple on the large holes of a box grater. Fold the grated apple into the blended batter and let it rest for 5 minutes so the oats hydrate. (about 7 min)
- Melt a little butter in a nonstick skillet over medium-low heat. Pour about 3 tablespoons batter per pancake, leaving space between pancakes. (about 1 min) — Medium-low
- Cook until the edges look set and bubbles form on the surface, about 2 to 3 minutes. Flip carefully and cook until browned and set through, 1 to 2 minutes more. (about 4 min) — Medium-low
- Wipe out the skillet if needed, add more butter, and repeat with the remaining batter. Serve warm with additional maple syrup if desired. (about 6 min) — Medium-low
