- 1 cup whole milk
- 1 teaspoon smoked paprika
- 1 teaspoon kosher salt

Cooking instructions
- Place the poblano directly over a gas burner flame, turning with tongs until the skin is blistered and blackened all over, 5 to 7 minutes. - Add the sweet potatoes, corn, broth, salt, and pepper. Bring to a boil, then reduce the heat and simmer, partially covered, until the sweet potatoes are fork-tender, 15 to 18 minutes. (about 18 min) — Simmer
- Stir in the milk, smoked paprika, and chopped roasted poblano. Warm gently for 3 to 5 minutes; do not boil. Taste and adjust the salt and pepper. (about 5 min) — Low heat
- Ladle the chowder into bowls and top with sliced scallions. (about 1 min)
