Prep: 10 min · Cook: 20 min · Yield: 4 · Method: Stovetop
Ingredients
- 1 tablespoon olive oil
- 2 cloves garlic
- 28 ounces crushed tomatoes
- 2 cups water
- 1.5 cups orzo
- 1 teaspoon kosher salt
- 0.5 teaspoon black pepper
- 10 ounces canned tuna
- 5 ounces baby spinach
- 0.75 cup parmesan cheese
- 1 medium lemon
Cooking instructions
- Heat the olive oil in a large deep skillet over medium heat. Add the garlic and cook for 30 seconds, until fragrant. (about 1 min) — Medium
- Add the crushed tomatoes, water, orzo, salt, and pepper. Bring to a simmer, stirring frequently so the orzo does not stick. (about 4 min) — Medium
- Reduce the heat to medium-low and simmer uncovered, stirring often, until the orzo is tender and most of the liquid is absorbed, 10 to 12 minutes. Add a splash of water if needed. (about 12 min) — Medium-low
- Fold in the drained tuna and spinach. Cook until the spinach wilts and the tuna is heated through, about 2 minutes. (about 2 min) — Medium-low
- Remove from the heat and stir in the Parmesan and finely grated zest and juice of the lemon. Taste and adjust the salt and pepper before serving. (about 1 min) — Off heat
