- 1 cup shredded cheddar cheese
- 0.5 medium yellow onion
- 0.5 cup dill pickles
- 2 tablespoons yellow mustard
- 1 teaspoon kosher salt
- 0.5 teaspoon black pepper
- 0.5 cup pasta water
Cooking instructions
- Bring a large pot of salted water to a boil. Cook the pasta according to package directions until al dente. Reserve 1/2 cup pasta water, then drain. (about 10 min)

- Blend the cottage cheese, mustard, salt, and pepper until smooth. Add the drained pasta and cottage cheese mixture to the skillet with the beef. Stir over low heat, adding pasta water a few tablespoons at a time until creamy, about 2 minutes. (about 2 min) — Low heat
- Remove the skillet from the heat. Stir in the cheddar until melted, then fold in the pickles. Serve hot. (about 1 min)
