Ingredients
- 1 cup long-grain white rice
- 2.25 cups low-sodium chicken or vegetable broth
- 0.5 teaspoon garlic powder
- 0.25 teaspoon black pepper
- 2 5-ounce cans canned tuna
- 1 cup frozen peas
- 1 medium lemon
- 2 tablespoons fresh dill
- 1 tablespoon unsalted butter
- 0.25 teaspoon salt
Cooking instructions
- Combine the rice, broth, garlic powder, black pepper, and salt in a medium pot. Bring to a boil over medium-high heat. (about 5 min)
- Reduce the heat to low, cover, and simmer until the rice is tender and the broth is absorbed, 17 to 20 minutes. Remove from the heat and let stand, covered, for 5 minutes. (about 25 min)
- Drain the tuna and fluff the rice with a fork. Gently fold in the tuna, frozen peas, and butter. Cover and return the pot to low heat for 3 to 4 minutes, until the peas are hot and the tuna is steaming. (about 4 min)
- Zest half of the lemon, then cut it in half and squeeze in 1 to 2 tablespoons of juice. Fold the zest, lemon juice, and dill into the rice. Taste and adjust the salt and pepper before serving. (about 3 min)
