Prep: 10 min · Cook: 30 min · Yield: 4 · Method: Stovetop
Ingredients
- 1 lb ground beef
- 1 small yellow onion
- 8 oz mushrooms
- 2 cloves garlic
- 1 cup orzo
- 3 cups beef broth
- 1 tsp paprika
- 1 tsp salt
- 0.5 tsp black pepper
- 0.5 cup sour cream
- 2 tbsp fresh parsley
Cooking instructions
- Finely chop the onion, slice the mushrooms, and mince the garlic. (about 5 min)
- Heat a large deep skillet or Dutch oven over medium-high heat. Add the ground beef and onion. Cook, breaking the beef into small pieces, until no pink remains and the beef reaches 160°F (71°C). Drain excess grease if needed. (about 8 min) — 160°F (71°C)
- Add the mushrooms, garlic, paprika, salt, and black pepper. Cook until the mushrooms soften and release their moisture. (about 5 min) — Medium heat
- Stir in the orzo and beef broth. Bring to a boil, then reduce the heat to maintain a steady simmer. Cook uncovered, stirring often, until the orzo is tender and most of the broth is absorbed. (about 12 min) — Simmer
- Remove the skillet from the heat. Let it cool for 1 minute, then stir in the sour cream until smooth. If the mixture is too thick, loosen it with a splash of broth or water. (about 2 min)
- Taste and adjust the seasoning. Sprinkle with parsley and serve hot. (about 1 min)
