3-Ingredient Potato Soup
A cozy, velvety potato soup made with tender potatoes, savory broth, and cream cheese. Partial blending keeps it smooth with a little rustic texture, while salt and pepper bring the simple ingredients into balance.
Prep: 10 min · Cook: 25 min · Yield: 6 · Method: Stovetop
Ingredients
- 2 lb potatoes
- 6 cups chicken or vegetable broth
- 8 oz cream cheese
- 1 tsp kosher salt
- 0.5 tsp black pepper
Cooking instructions
- Peel the potatoes and cut them into 1-inch pieces. (about 10 min)
- Place the potatoes and broth in a large pot. Bring to a boil over medium-high heat, then reduce the heat and simmer, uncovered, until the potatoes are very tender and easily pierced with a fork, 15 to 20 minutes. (about 20 min)
- Remove the pot from the heat. Use an immersion blender to partially blend the soup, leaving some potato pieces for texture. Alternatively, carefully blend about half the soup in batches in a countertop blender and return it to the pot. (about 3 min)
- Cut the cream cheese into small pieces and stir it into the hot soup until completely melted and smooth. Season with the salt and pepper, taste, and adjust as needed. Serve hot. (about 5 min)
