Ingredients
- 2 large bananas
- 2 cups old-fashioned rolled oats
- 0.333 cup chia seeds
- 0.333 cup walnuts
- 0.333 cup raisins
- 1 teaspoon ground cinnamon
- 0.25 teaspoon fine salt
Cooking instructions
- Heat the oven to 350°F. Line a large baking sheet with parchment paper. (about 5 min) — 350°F
- Mash the bananas in a large bowl until mostly smooth. Stir in the oats, chia seeds, walnuts, raisins, cinnamon, and salt until evenly combined. Let the mixture stand for 5 minutes so the chia seeds can absorb moisture. (about 5 min)
- Scoop 12 heaping 2-tablespoon portions onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each portion to about 1/2 inch thick; the cookies will not spread much. (about 3 min)
- Bake until the cookies look set and the edges are lightly golden, 14 to 16 minutes. Cool on the baking sheet for 5 minutes, then transfer to a rack to cool completely. (about 16 min) — 350°F
