Ingredients
- 1.5 cups apple cider
- 2.25 cups all-purpose flour
- 1.5 teaspoons ground cinnamon
- 0.5 teaspoon baking soda
- 0.5 cup unsalted butter
- 0.75 cup granulated sugar
- 1 egg
- 0.25 teaspoon salt
Cooking instructions
- Pour the apple cider into a small saucepan and bring it to a gentle boil over medium-high heat. Reduce until about 1/3 cup remains, 12 to 15 minutes. Transfer to a heatproof measuring cup and cool completely to room temperature. (about 15 min) — Gentle boil
- Heat the oven to 350°F. Line two baking sheets with parchment paper. (about 5 min) — 350°F
- Whisk the flour, cinnamon, baking soda, and salt in a medium bowl. (about 2 min)
- Beat the butter and sugar in a large bowl until light and fluffy, about 2 minutes. Beat in the egg, then mix in the cooled cider reduction. (about 3 min)
- Add the dry ingredients and mix just until no dry streaks remain. Let the dough rest for 10 minutes so it thickens slightly. (about 12 min)
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. (about 5 min)
- Bake one sheet at a time for 10 to 12 minutes, until the edges are set and the centers still look slightly soft. Cool on the baking sheet for 5 minutes, then transfer to a rack to cool completely. (about 12 min) — 350°F
