Prep: 10 min · Cook: 30 min · Yield: 4 · Method: Stovetop
Ingredients
- 1 lb ground beef
- 1 small yellow onion
- 2 cloves garlic
- 1.5 cups orzo
- 3 cups low-sodium beef broth
- 1 can (14.5 oz) diced tomatoes
- 1 tablespoon yellow mustard
- 1 teaspoon kosher salt
- 0.5 teaspoon black pepper
- 1.5 cups shredded sharp cheddar cheese
- 0.5 cup dill pickles
Cooking instructions
- Heat a large deep skillet or Dutch oven over medium-high heat. Add the ground beef and onion. Cook, breaking the beef into small pieces, until the beef is browned and reaches 160°F, 7 to 9 minutes. Drain excess fat if needed. (about 9 min) — Medium-high heat
- Stir in the garlic, salt, and black pepper. Cook until fragrant, about 30 seconds. (about 1 min) — Medium-high heat
- Add the orzo, beef broth, diced tomatoes with their juices, and mustard. Stir well and bring to a boil. (about 4 min) — High heat
- Reduce the heat to medium-low. Simmer uncovered, stirring occasionally, until the orzo is tender and most of the liquid is absorbed, 10 to 12 minutes. Add a splash of water if the pan becomes dry before the orzo is tender. (about 12 min) — Medium-low heat
- Remove the skillet from the heat. Stir in the cheddar until melted and creamy, then fold in the pickles. Taste and adjust the seasoning before serving. (about 2 min) — Off heat
