Prep: 5 min · Cook: 20 min · Yield: 4 · Method: Stovetop
Ingredients
- 12 oz pasta
- 3 cups low-sodium chicken or vegetable broth
- 2 cups whole milk
- 4 cloves garlic
- 2 tablespoons unsalted butter
- 1 cup parmesan cheese
- 2 tablespoons fresh parsley
- 0.5 teaspoon kosher salt
- 0.25 teaspoon black pepper
Cooking instructions
- Finely chop the garlic and parsley. Grate the Parmesan if needed. (about 5 min)
- Add the broth, milk, garlic, salt, and pepper to a large deep skillet or Dutch oven. Bring to a gentle simmer over medium heat, stirring occasionally so the milk does not scorch. (about 5 min) — Medium heat
- Add the pasta and press it under the liquid. Simmer uncovered, stirring frequently and separating the noodles, until the pasta is tender and most of the liquid has been absorbed, 10 to 12 minutes. Reduce the heat if the mixture bubbles vigorously. (about 12 min) — Gentle simmer
- Remove from the heat. Stir in the butter, Parmesan, and parsley until the butter melts and the sauce is creamy. Let stand for 2 minutes; loosen with a splash of milk if needed, then taste and adjust seasoning. (about 3 min)
