Prep: 10 min · Cook: 25 min · Yield: 6 · Method: Stovetop
Ingredients
- 3 pounds sweet potatoes
- 6 tablespoons unsalted butter
- 0.5 cup whole milk
- 2 tablespoons maple syrup
- 0.5 teaspoon ground cinnamon
- 1 teaspoon kosher salt
Cooking instructions
- Peel the sweet potatoes and cut them into 1-inch chunks. Place them in a large pot, cover with cold water by 1 inch, and bring to a boil over high heat. (about 10 min)
- Reduce the heat to maintain a steady simmer and cook until the potatoes are very tender when pierced with a fork, about 12 to 15 minutes. Drain well and return them to the warm pot. (about 15 min)
- While the potatoes cook, melt the butter in a small saucepan over medium heat. Cook, swirling occasionally, until the milk solids turn golden brown and the butter smells nutty, about 4 to 6 minutes. Remove from the heat. (about 6 min)
- Warm the milk in the same saucepan over low heat for about 1 minute, then add it to the potatoes along with the browned butter, maple syrup, cinnamon, and salt. (about 2 min)
- Mash until smooth, adjusting the texture with a splash of additional milk if needed. Taste and add more salt or maple syrup if desired. Serve hot. (about 3 min)
