Ingredients
- 10 ounces medjool dates
- 0.25 cup tahini
- 0.75 cup old-fashioned oats
- 0.25 cup unsweetened cocoa powder
- 0.33 cup sesame seeds
- 0.125 teaspoon kosher salt
- 1 teaspoon vanilla extract
Cooking instructions
- Remove the pits from the dates. If the dates feel firm or dry, soak them in hot water for 5 minutes, then drain and pat dry. (about 5 min)
- Add the dates, tahini, oats, cocoa powder, vanilla extract, and salt to a food processor. Blend until the mixture is sticky and holds together when pressed, scraping down the sides as needed. (about 3 min)
- Pour the sesame seeds into a shallow bowl. Scoop out 1 tablespoon of the date mixture at a time and roll between your palms into bite-size balls. (about 5 min)
- Roll each ball in the sesame seeds, gently pressing so the seeds adhere. Arrange the bites on a plate or small tray. (about 2 min)
- Chill until firm, then serve. Store covered in the refrigerator for up to 1 week. (about 30 min)
