Prep: 10 min · Cook: 25 min · Yield: 4 · Method: Stovetop
Ingredients
- 1 pound italian sausage
- 3 cloves garlic
- 1 can (14.5 ounces) diced tomatoes
- 20 ounces cheese tortellini
- 1 cup water
- 0.75 cup heavy cream
- 5 ounces baby spinach
- 0.75 cup parmesan cheese
- 1 teaspoon italian seasoning
- 0.25 teaspoon red pepper flakes
- 0.5 teaspoon kosher salt
- 0.25 teaspoon black pepper
Cooking instructions
- Heat a large deep skillet over medium-high heat. Remove the sausage from its casings, if needed, and cook for 6 to 8 minutes, breaking it into crumbles, until browned and cooked through to 160°F. Drain excess grease if necessary. (about 8 min) — Medium-high heat
- Add the garlic, Italian seasoning, and red pepper flakes. Cook for 30 seconds, stirring, until fragrant. (about 1 min) — Medium heat
- Stir in the diced tomatoes with their juices, tortellini, and water. Bring to a gentle simmer, cover, and cook for 8 to 10 minutes, stirring once or twice, until the tortellini are tender. (about 10 min) — Gentle simmer
- Reduce the heat to low. Stir in the heavy cream and spinach, and cook for 2 to 3 minutes until the spinach wilts and the sauce is hot. Do not boil. (about 3 min) — Low heat
- Remove from the heat and stir in the Parmesan, salt, and black pepper. Let stand for 2 minutes to thicken, then serve hot. (about 2 min) — Off heat
