Prep: 15 min · Cook: 20 min · Yield: 4 · Method: Stovetop
Ingredients
- 1 lb ground beef
- 8 8-inch flour tortillas
- 2 cups shredded sharp cheddar cheese
- 1 2/3 cup chopped dill pickles
- 0.5 medium yellow onion
- 0.5 cup burger sauce
- 0.5 teaspoon garlic powder
- 0.75 teaspoon kosher salt
- 0.25 teaspoon black pepper
- 2 teaspoons vegetable oil
Cooking instructions
- Finely chop the onion and pickles. Divide the burger sauce into a small bowl for serving and a bowl for assembling, if desired. (about 5 min)
- Heat a large skillet over medium-high heat. Add the ground beef, salt, pepper, and garlic powder. Cook, breaking it into small crumbles, until browned and the beef reaches 160°F, about 6 to 8 minutes. Drain excess fat, then stir in half of the chopped onion. Cook for 2 minutes and remove from the heat. (about 8 min) — Medium-high heat
- Spread burger sauce over one side of each tortilla. On four tortillas, layer cheddar, the cooked beef, pickles, remaining onion, and the remaining cheddar. Top with the other tortillas, sauce-side down, and press gently. (about 4 min)
- Wipe out the skillet and return it to medium heat. Brush or lightly coat with oil. Cook the quesadillas one or two at a time for 2 to 3 minutes per side, turning when the bottoms are golden brown and the cheese begins to melt. Add a little more oil as needed. (about 6 min) — Medium heat
- Transfer to a cutting board, rest for 1 minute, then cut each quesadilla into wedges. Serve hot with the remaining burger sauce. (about 2 min)
