Ingredients
- 1 pound ground beef
- 12 corn tortillas
- 1 cup, shredded sharp cheddar cheese
- 1 cup salsa
- 1 ounce packet taco seasoning
- 0.25 cup water
- 1 can vegetable oil spray
Cooking instructions
- Heat a large skillet over medium-high heat. Add the ground beef and cook for 6 to 8 minutes, breaking it into small crumbles, until no pink remains and it reaches 160°F. (about 8 min) — Medium-high
- Drain excess grease. Stir in the taco seasoning and water. Simmer for 2 to 3 minutes, stirring, until the liquid is mostly absorbed. Remove from the heat. (about 3 min) — Medium
- Warm the tortillas in the microwave under a damp paper towel for 30 to 45 seconds, until flexible. Keep them covered while assembling. (about 1 min) — Microwave
- Place about 2 tablespoons of beef and 1 tablespoon of cheddar across the lower third of each tortilla. Roll tightly and place seam-side down. Repeat with the remaining tortillas. (about 6 min) — Room temperature
- Preheat the air fryer to 400°F for 3 minutes. Lightly coat the basket and taquitos with vegetable oil spray. Arrange the taquitos seam-side down in a single layer, leaving space between them. (about 3 min) — 400°F
- Air fry for 5 to 6 minutes, then turn and cook for 2 to 3 minutes more, until golden brown and crisp and the cheese is melted. Work in batches if needed. (about 8 min) — 400°F
- Rest for 2 minutes, then serve with salsa for dipping. (about 2 min) — Room temperature
