Cottage Cheese Chocolate Mousse

Ingredients

Cooking instructions

  1. Place the chopped dark chocolate in a microwave-safe bowl. Microwave in 20-second intervals, stirring between each, until almost completely melted; stir until smooth. Alternatively, melt it in a heatproof bowl over a saucepan of barely simmering water. Let cool for 5 minutes so it is warm but not hot. (about 5 min)
  2. Add the cottage cheese, cocoa powder, maple syrup, vanilla, and salt to a high-powered blender or food processor. Blend for 1 to 2 minutes, scraping down the sides as needed, until completely smooth. (about 2 min)
  3. Add the melted chocolate and blend for 30 to 60 seconds more, until fully combined and silky. Taste and add a little more maple syrup if desired. (about 1 min)
  4. Divide the mousse among 4 small serving glasses or bowls. Cover and refrigerate for at least 1 hour, until cold and set enough to hold soft peaks. (about 60 min) — Refrigerate at 40°F (4°C) or below
  5. Top with the fresh berries and serve chilled. Keep refrigerated and do not leave at room temperature for more than 2 hours. (about 2 min) — Serve cold
