Ingredients
- 2 cups (480 g) plain greek yogurt
- 2 medium (about 300 g) apples
- 1 tablespoon (14 g) unsalted butter
- 1 teaspoon (3 g) ground cinnamon
- 1 tablespoon (12 g) light brown sugar
- 1 2/3 cup (60 g) old-fashioned rolled oats
- 1 1/4 cup (30 g) walnuts
- 1 pinch kosher salt
Cooking instructions
- Melt the butter in a medium skillet over medium heat. Add the apples, brown sugar, and 1/2 teaspoon of the cinnamon. Cook, stirring occasionally, for 5 to 7 minutes, until the apples are tender but still hold their shape and the juices are lightly syrupy. Remove from the heat. (about 7 min) — Medium heat; apples should be tender, not crunchy.
- While the apples cook, place the oats, walnuts, remaining 1/2 teaspoon cinnamon, and salt in a dry small skillet over medium-low heat. Toast for 3 to 4 minutes, stirring often, until fragrant and lightly golden. Transfer to a plate immediately so they do not continue browning in the hot skillet. (about 4 min) — Medium-low heat; oats and walnuts should be lightly golden and fragrant.
- Divide the Greek yogurt between two bowls. Spoon the warm apples over the yogurt, then sprinkle with the toasted cinnamon oats and walnuts just before eating. (about 1 min) — Serve immediately, or cool the apples briefly until warm rather than piping hot.
