Ingredients
- 1 loaf (about 16 ounces or 450 g) french bread loaf
- 1 tablespoon olive oil
- 0.75 cup (180 ml) barbecue sauce
- 2 cups (about 280 g), shredded or chopped cooked chicken
- 0.5 small red onion
- 2 cups (200 g), shredded mozzarella cheese
- 0.25 cup (15 g) fresh cilantro
- 0.25 teaspoon garlic powder
- 0.125 teaspoon black pepper
Cooking instructions
- Heat the oven to 425°F (220°C). Line a baking sheet with parchment. Slice the French loaf in half lengthwise, then cut each half crosswise so you have four pieces. Place them cut-side up on the sheet and brush the cut sides with olive oil. (about 5 min) — 425°F (220°C)
- Toast the bread until the edges are crisp and the cut surfaces are lightly golden, 5 to 6 minutes. (about 6 min) — 425°F (220°C)
- Stir the barbecue sauce with the garlic powder and black pepper. Spread the sauce over the toasted bread, leaving a narrow border. Top evenly with the cooked chicken, thinly sliced red onion, and mozzarella. (about 4 min) — Room temperature
- Bake until the cheese is fully melted and bubbling and the toppings are hot, 7 to 9 minutes. If using leftover chicken, check that the thickest pieces reach 165°F (74°C) with an instant-read thermometer. (about 9 min) — 425°F (220°C)
- Scatter the cilantro over the pizzas. Rest for 2 minutes, slice if desired, and serve hot. (about 2 min) — Room temperature
