Ingredients
- 1 lb (454 g) 80/20 ground beef
- 8 6-inch (15 cm) small flour tortillas
- 1 tsp (6 g) kosher salt
- 0.5 tsp (1 g) black pepper
- 4 oz (113 g) sliced cheddar cheese
- 2 cups (100 g) shredded iceberg lettuce
- 1 cup (150 g) dill pickle chips
- 0.5 cup (120 g) mayonnaise
- 0.25 cup (60 g) ketchup
- 2 tbsp (30 g) yellow mustard
- 1 tbsp (15 ml) dill pickle juice
Cooking instructions
- In a small bowl, stir together the mayonnaise, ketchup, mustard, and pickle juice. Refrigerate until serving. (about 5 min)
- Divide the ground beef into 8 equal portions, about 2 ounces (57 g) each. Season the top of each portion lightly with the salt and pepper. Place one portion seasoned-side down on each tortilla and press or spread it into a thin, even layer nearly to the edges. (about 5 min)
- Heat a large cast-iron or nonstick skillet over medium-high heat until hot. Cook the tacos in batches, beef-side down, without crowding, pressing gently with a spatula for the first few seconds. Cook until the beef is browned, crisp at the edges, and reaches 160°F (71°C) internally, about 3 to 4 minutes. (about 4 min) — Medium-high
- Flip each taco once the beef is cooked. Place a slice or portion of cheddar on the beef, cover the skillet, and cook until the cheese melts and the tortilla is lightly crisp, about 1 to 2 minutes. (about 2 min) — Medium-high
- Top each taco with shredded lettuce, pickle chips, and burger sauce. Serve hot, with extra sauce if desired. (about 2 min)
