- 1 lb (454 g) fresh green beans
- 3 cloves (about 9 g) garlic
- 1 tbsp (15 g) fresh ginger
- 0.25 cup (60 mL) reduced-sodium soy sauce
- 1 tbsp (21 g) honey
- 1 tbsp (15 mL) neutral cooking oil
- 0.25 tsp (0.5 g) black pepper
Cooking instructions
- Rinse the rice until the water runs mostly clear. Combine it with the water in a saucepan and bring to a boil. Cover, reduce the heat to low, and simmer until the water is absorbed and the rice is tender, 15 to 18 minutes. Remove from the heat and let stand, covered, for 5 minutes, then fluff with a fork. (about 23 min) — Simmer over low heat
- While the rice cooks, trim the green beans and cut them into 1-inch pieces. Mince the garlic and grate the ginger. Stir the soy sauce and honey together in a small bowl. (about 5 min) — Room temperature
- Heat a large skillet or wok over medium-high heat. Add the ground beef and cook, breaking it into small pieces, until browned and no longer pink, 5 to 7 minutes. Drain excess fat from the skillet. Continue cooking until the beef reaches at least 160°F (71°C) on an instant-read thermometer, then transfer it to a bowl. (about 7 min) — Medium-high heat; beef 160°F (71°C)
- Return the skillet to medium-high heat and add the oil. Add the green beans and stir-fry until bright green and crisp-tender, 5 to 7 minutes. Add the garlic, ginger, and black pepper; stir-fry for 30 seconds, until fragrant. (about 7 min) — Medium-high heat
- Return the beef to the skillet and pour in the soy-honey sauce. Toss continuously until the beef and beans are evenly coated and the sauce is bubbling, 1 to 2 minutes. (about 2 min) — Medium-high heat; sauce bubbling
- Serve the stir-fry hot over the rice. (about 1 min) — Hot
