Ingredients
- 2 tablespoons (30 ml) olive oil
- 1.25 pounds (567 g) ground turkey
- 1.5 pounds (680 g) sweet potatoes
- 1 medium (about 170 g) yellow onion
- 2 medium (about 250 g total) bell peppers
- 2 cloves garlic
- 1 teaspoon (2 g) ground cumin
- 1 teaspoon (2 g) paprika
- 1 teaspoon (6 g), divided kosher salt
- 0.5 teaspoon (1 g) black pepper
- 3 ounces (85 g) baby spinach
- 0.5 cup (120 ml) water
Cooking instructions
- Heat 1 tablespoon (15 ml) of the olive oil in a large skillet over medium-high heat. Add the ground turkey, 1/2 teaspoon salt, and the black pepper. Cook for 6 to 8 minutes, breaking it into crumbles, until no pink remains and the thickest pieces reach 165°F (74°C). Transfer the turkey to a plate. (about 8 min) — Medium-high heat
- Add the remaining 1 tablespoon (15 ml) olive oil to the skillet. Add the onion, bell peppers, and sweet potatoes, then cook for 3 minutes, stirring occasionally. Add the garlic, cumin, paprika, and remaining 1/2 teaspoon salt; cook for 30 seconds. (about 4 min) — Medium heat
- Pour in the water and scrape up any browned bits. Cover and steam-sauté for 10 to 12 minutes, stirring once or twice, until the sweet potato cubes are fork-tender and most of the water has evaporated. (about 12 min) — Medium heat
- Return the turkey to the skillet and stir to combine. Add the spinach, cover, and cook for 2 to 3 minutes, stirring once, until the spinach wilts and the turkey is hot throughout. Serve immediately. (about 3 min) — Medium heat
