- 2 cups low-sodium chicken broth
- 1 can (15 ounces) black beans
- 1 cup corn
- 1 medium lime
Cooking instructions
- Heat the olive oil in a large deep skillet or Dutch oven over medium-high heat. Add the ground turkey and onion. Cook, breaking up the turkey, until the turkey is no longer pink and the onion is softened, 5 to 7 minutes. Drain excess liquid if needed. (about 7 min) — Medium-high heat
- Add the garlic, chili powder, cumin, and salt. Cook, stirring, until fragrant, about 30 seconds. (about 1 min) — Medium-high heat

- Stir in the black beans and corn. Cover and cook until heated through, about 3 minutes. Remove from the heat and let stand, covered, for 5 minutes. (about 8 min) — Off heat
- Fluff with a fork, squeeze in the lime juice, and taste for salt. Confirm the turkey reaches 165°F in the thickest portions before serving. (about 1 min) — 165°F
