Air Fryer Turkey Sausage Breakfast Burritos

Ingredients

Cooking instructions

  1. Preheat the air fryer to 400°F for 3 minutes. Toss the frozen diced potatoes with olive oil, 1/2 teaspoon salt, and the black pepper. Air-fry in a single layer for 12 to 15 minutes, shaking halfway, until browned and tender. (about 15 min) — 400°F
  2. Meanwhile, cook the turkey sausage in a large nonstick skillet over medium heat for 6 to 8 minutes, breaking it into small pieces, until no pink remains and it reaches 165°F (74°C). Transfer to a plate. (about 8 min) — Medium heat
  3. Whisk the eggs with the remaining 1/2 teaspoon salt. Add them to the skillet and cook over medium-low heat, stirring gently, until softly set with no liquid egg remaining, about 3 to 4 minutes. Remove from the heat. (about 4 min) — Medium-low heat
  4. Warm the tortillas briefly so they are flexible. Divide the potatoes, sausage, eggs, and cheese among the tortillas. Fold in the sides, roll each tortilla tightly, and place seam-side down. (about 5 min) — Not applicable
  5. For immediate cooking, preheat the air fryer to 375°F. Place burritos seam-side down in the basket without crowding and air-fry for 5 to 7 minutes, turning once, until crisp and the centers are hot. (about 7 min) — 375°F
  6. For freezing, cool the filling completely before assembling. Wrap each burrito tightly in foil, place in a freezer bag, and freeze for up to 3 months. To cook from frozen, remove the foil, wrap in a paper towel, microwave for 1 1/2 to 2 1/2 minutes until hot throughout, then air-fry at 375°F for 4 to 6 minutes until crisp. The center should reach 165°F. (about 6 min) — 375°F
