Ingredients
- 2 medium apples
- 2 tablespoons granulated sugar
- 1 teaspoon all-purpose flour
- 0.5 teaspoon ground cinnamon
- 1 teaspoon lemon juice
- 2 9-inch crusts refrigerated pie crusts
- 1 large egg
- 1 teaspoon water
- 1 cup powdered sugar
- 0.5 teaspoon vanilla extract
- 1 tablespoon milk
Cooking instructions
- Peel, core, and cut the apples into 1/4-inch dice. In a small bowl, toss them with granulated sugar, flour, cinnamon, and lemon juice. Let stand for 5 minutes. (about 5 min)
- Unroll the pie crusts on a lightly floured surface. Cut eight 5-inch rounds, rerolling scraps once if needed. Place 2 tablespoons of apple filling in the center of each round, leaving a 1/2-inch border. (about 8 min)
- Whisk the egg with the water. Brush the pastry edges lightly with egg wash, fold each round over the filling, and press the edges together. Crimp with a fork, then cut two small vents in each pie. Brush the tops with the remaining egg wash. (about 7 min)
- Preheat the air fryer to 350°F for 3 minutes. Arrange the hand pies in a single layer, leaving space between them. Air-fry in batches if necessary. (about 3 min) — 350°F
- Air-fry until the pastry is puffed and golden brown, 8 to 10 minutes. Transfer to a rack and cool for at least 10 minutes. (about 10 min) — 350°F
- Whisk the powdered sugar, vanilla, and milk until smooth. Drizzle the glaze over the cooled hand pies and let it set briefly before serving. (about 3 min)
