Ingredients
- 1.25 pounds cod fillets
- 0.5 cup all-purpose flour
- 1 large egg
- 1 cup panko breadcrumbs
- 1 teaspoon paprika
- 1 teaspoon kosher salt
- 0.5 teaspoon black pepper
- 3 cups shredded green cabbage
- 0.5 cup mayonnaise
- 1 tablespoon apple cider vinegar
- 2 tablespoons dill pickle relish
- 1 tablespoon lemon juice
- 0.5 cup dill pickles
- 4 hamburger buns
- 1 serving cooking spray
Cooking instructions
- Pat the cod dry and cut it into four evenly sized portions. Season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Set up three shallow bowls: flour; beaten egg; and panko mixed with paprika, the remaining 1/2 teaspoon salt, and remaining 1/4 teaspoon pepper. (about 5 min)
- Coat each cod portion in flour, dip in egg, then press into the seasoned panko until well covered. Set the breaded fish on a plate and lightly spray both sides with cooking spray. (about 7 min)
- Preheat the air fryer to 400°F. Arrange the cod in a single layer, leaving space between pieces. Air-fry for 10 to 12 minutes, turning carefully halfway through, until deeply golden and the thickest part reaches 145°F and flakes easily. (about 12 min) — 400°F
- While the fish cooks, toss the cabbage with 2 tablespoons mayonnaise, the vinegar, and a pinch of salt. Stir the remaining 6 tablespoons mayonnaise with pickle relish and lemon juice to make the tartar sauce. (about 5 min)
- Place the buns cut-side up in the air fryer for 1 to 2 minutes, until lightly toasted. Layer each bun with tartar sauce, crispy cod, cabbage slaw, and dill pickles. Serve immediately. (about 2 min) — 350°F
