Ingredients
- 1.5 pounds chicken breasts, boneless, skinless
- 2 tablespoons olive oil
- 1 medium lemon
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1 teaspoon kosher salt
- 0.5 teaspoon black pepper
- 4 cups cooked white rice
- 1 medium english cucumber
- 2 cups cherry tomatoes
- 1 cup hummus
- 0.75 cup crumbled feta cheese
Cooking instructions
- Pat the chicken dry. If the breasts are thick, slice them horizontally into thinner cutlets so they cook evenly. (about 3 min)
- In a bowl, whisk the olive oil, zest and juice of half the lemon, oregano, garlic powder, salt, and pepper. Add the chicken and turn to coat. (about 2 min)
- Preheat the air fryer to 400°F for 3 minutes. Arrange the chicken in a single layer in the basket, leaving space between pieces. (about 3 min) — 400°F
- Air fry the chicken for 6 minutes. Flip and cook for 4 to 6 minutes more, until the thickest part reaches 165°F on an instant-read thermometer. Rest for 5 minutes, then slice. (about 12 min) — 400°F
- While the chicken cooks, dice the cucumber and halve the tomatoes. Divide the warm rice among four bowls and top with the cucumber, tomatoes, hummus, feta, and sliced chicken. Serve with the remaining lemon cut into wedges. (about 5 min)
