Ingredients
- 0.5 cup chia seeds
- 2 cups milk
- 0.25 cup unsweetened cocoa powder
- 0.25 cup pure maple syrup
- 1 teaspoon vanilla extract
- 0.125 teaspoon fine salt
- 1 cup fresh berries
- 2 tablespoons shaved dark chocolate
Cooking instructions
- In a medium bowl, whisk the milk, cocoa powder, maple syrup, vanilla extract, and salt until the cocoa is fully dissolved and the mixture is smooth. (about 3 min)
- Whisk in the chia seeds until evenly distributed. Let the mixture stand for 10 minutes, then whisk thoroughly again to break up clumps and redistribute the seeds. (about 10 min)
- Cover and refrigerate until thick and spoonable, at least 4 hours or overnight. Whisk once more before serving; if the pudding is too thick, stir in 1 to 2 tablespoons milk. (about 240 min)
- Divide among four glasses or bowls and top with fresh berries and shaved dark chocolate. (about 2 min)
