Prep: 30 min · Cook: 25 min · Yield: 12 · Method: Oven
Ingredients
- 4.25 cups all-purpose flour
- 2.25 teaspoons active dry yeast
- 1 cup whole milk
- 6 tablespoons unsalted butter
- 0.75 cup pumpkin puree
- 0.75 cup brown sugar
- 2 teaspoons ground cinnamon
- 0.25 cup granulated sugar
- 1 each large egg
- 1 teaspoon kosher salt
Cooking instructions
- Warm the milk and 2 tablespoons of the butter in a small saucepan over low heat until the butter melts and the mixture is lukewarm, about 105°F. Remove from the heat, stir in the granulated sugar and yeast, and let stand until foamy, 5 to 10 minutes. (about 10 min) — 105°F
- In a large bowl, whisk together 4 cups of the flour and the salt. Add the yeast mixture, pumpkin puree, and egg. Stir until a shaggy dough forms. (about 5 min)
- Turn the dough onto a lightly floured surface and knead, adding the remaining 1/4 cup flour as needed, until smooth and slightly tacky, 6 to 8 minutes. Place in a lightly greased bowl, cover, and let rise in a warm, draft-free place until doubled, about 1 hour. (about 70 min) — 75-80°F
- Melt the remaining 4 tablespoons butter. In a small bowl, stir together the brown sugar and cinnamon. Grease a 9-by-13-inch baking pan. (about 5 min)
- Roll the dough into a 16-by-12-inch rectangle. Brush with most of the melted butter, leaving a 1/2-inch border, then sprinkle evenly with the cinnamon-sugar mixture. Starting at a long edge, roll tightly into a log and pinch the seam closed. (about 10 min)
- Cut the log into 12 equal pieces and arrange them cut-side up in the prepared pan. Cover and proof until noticeably puffy and the rolls slowly spring back when pressed, 30 to 45 minutes. (about 45 min) — 75-80°F
- Heat the oven to 350°F. Brush the rolls with the remaining melted butter and bake until golden brown and the centers reach 190°F, 22 to 27 minutes. Cool for 10 minutes before serving. (about 27 min) — 350°F
