Ingredients
- 0.5 cup apple cider
- 0.25 cup cider vinegar
- 2 tablespoons dijon mustard
- 2 tablespoons olive oil
- 3 cloves garlic
- 1 tablespoon fresh sage
- 1 teaspoon kosher salt
- 0.5 teaspoon black pepper
Cooking instructions
- Add the apple cider, cider vinegar, Dijon mustard, olive oil, salt, and black pepper to a bowl or 1-gallon resealable bag. Peel and finely chop the garlic, finely chop the sage, and add both. (about 5 min)
- Whisk the marinade until smooth. Reserve 1/4 cup separately if you want sauce for serving; do not use marinade that has touched raw pork unless it is boiled first. (about 2 min)
- Add up to 2 pounds of pork chops to the remaining marinade, seal, and turn to coat. Refrigerate for 2 to 8 hours, turning once or twice. Do not marinate at room temperature. (about 480 min) — Refrigerate
- Remove the pork from the marinade and discard the used marinade. Pat the chops dry, then cook using your preferred method until the thickest part reaches 145°F, followed by a 3-minute rest. If using the reserved unused marinade, serve it as is or simmer it separately for at least 1 minute before serving. (about 3 min) — 145°F
