Prep: 15 min · Cook: 0 min · Yield: 8 · Method: No-Cook
Ingredients
- 2 15-ounce cans mandarin oranges
- 1 20-ounce can pineapple tidbits
- 1 cup sweetened shredded coconut
- 2 cups mini marshmallows
- 1 cup sour cream
- 1 2-ounce jar maraschino cherries
- 2 tablespoons confectioners' sugar
- 1 teaspoon vanilla extract
Cooking instructions
- Drain the mandarin oranges and pineapple in separate colanders. Let them drain for 10 minutes, then gently pat dry with paper towels; excess liquid can make the salad watery. Drain and halve the cherries, reserving a few for garnish. (about 10 min)
- In a large bowl, whisk the sour cream, confectioners' sugar, and vanilla extract until smooth. (about 2 min)
- Fold in the drained mandarin oranges, pineapple, coconut, mini marshmallows, and halved cherries until evenly coated. Fold gently to keep the fruit intact. (about 3 min)
- Cover and refrigerate for at least 2 hours, or until thoroughly chilled and lightly thickened. Garnish with the reserved cherries before serving. (about 120 min)
