Ingredients
- 1.5 pounds pork loin cutlets
- 0.5 cup all-purpose flour
- 2 large eggs
- 1.5 cups plain breadcrumbs
- 1.25 teaspoons kosher salt
- 0.5 teaspoon black pepper
- 0.5 teaspoon paprika
- 0.25 teaspoon garlic powder
- 2 tablespoons olive oil
- 1 lemon
Cooking instructions
- Place the pork cutlets between two sheets of plastic wrap and pound them to about 1/4 inch thick. Pat dry with paper towels. (about 5 min)
- Set out three shallow bowls. Put the flour in one. Beat the eggs in the second. In the third, combine the breadcrumbs, 1 teaspoon salt, pepper, paprika, and garlic powder. Stir the olive oil into the breadcrumb mixture until evenly moistened. (about 5 min)
- Coat each cutlet in flour, shaking off excess. Dip in the beaten egg, then press into the breadcrumbs so both sides are evenly covered. Place breaded cutlets on a plate and let them stand for 5 minutes to help the coating adhere. (about 5 min)
- Preheat the air fryer to 400°F for 3 minutes. Arrange cutlets in a single layer without overlapping. Air-fry in batches for 5 to 6 minutes per side, until deeply golden and the pork reaches 145°F in the thickest part. Add 1 to 2 minutes if needed. (about 12 min) — 400°F
- Transfer the schnitzel to a wire rack and rest for 2 minutes. Cut the lemon into wedges and serve with the pork. (about 2 min)
