Ingredients
- 1.5 cups jasmine rice
- 2.25 cups water
- 1 tablespoon vegetable oil
- 1 large red bell pepper
- 3 tablespoons red curry paste
- 1 can (13.5 ounces) unsweetened coconut milk
- 1 tablespoon fish sauce
- 1 teaspoon brown sugar
- 1.5 pounds raw large shrimp
- 1 cup fresh basil leaves
- 1 medium lime
Cooking instructions
- Rinse the jasmine rice until the water runs mostly clear. Combine it with the water in a medium saucepan. Bring to a boil, cover, reduce the heat to low, and cook until the water is absorbed and the rice is tender, 15 minutes. Remove from the heat and let stand, covered, for 5 minutes. (about 20 min) — Bring to a boil, then maintain low heat
- Meanwhile, peel and devein the shrimp if needed, leaving the tails on or off. Pat dry. Remove the stem and seeds from the bell pepper and slice it into thin strips. Tear the basil leaves and cut the lime into wedges. (about 10 min) — Room temperature
- Heat the oil in a large skillet over medium heat. Add the bell pepper and cook until slightly softened, about 3 minutes. Stir in the red curry paste and cook until fragrant, about 1 minute. (about 4 min) — Medium heat
- Stir in the coconut milk, fish sauce, and brown sugar. Bring the sauce to a gentle simmer and cook for 3 minutes, stirring occasionally. (about 3 min) — Gentle simmer
- Add the shrimp and simmer gently, turning once, until they are opaque and firm, 4 to 6 minutes. Do not boil vigorously. The shrimp should reach 145°F in the thickest part. (about 6 min) — Gentle simmer
- Remove the skillet from the heat and stir in half of the basil. Taste and adjust with additional fish sauce or lime juice if needed. Spoon the curry over the jasmine rice, scatter with the remaining basil, and serve with lime wedges. (about 2 min) — Off heat
