Ingredients
- 3.5 cups all-purpose flour
- 2.25 teaspoons active dry yeast
- 1 cup whole milk
- 1 egg large egg
- 5 tablespoons unsalted butter
- 2 tablespoons granulated sugar
- 1 teaspoon kosher salt
- 1 tablespoon unsalted butter
Cooking instructions
- Warm the milk and 4 tablespoons of butter in a small saucepan over low heat until the butter melts and the mixture is lukewarm, about 105°F. Remove from the heat, stir in the sugar and yeast, and let stand until foamy, 5 to 10 minutes. (about 10 min) — 105°F
- Whisk the egg into the milk mixture. In a large bowl, whisk together the flour and salt. Pour in the wet mixture and stir until a shaggy dough forms. (about 5 min)
- Turn the dough onto a lightly floured surface and knead until smooth and elastic, 6 to 8 minutes. Add flour a tablespoon at a time only if the dough is excessively sticky. (about 8 min)
- Place the dough in a lightly greased bowl, cover, and let rise in a warm, draft-free place until doubled in size, about 1 hour. (about 60 min)
- Grease a 9-by-13-inch baking pan. Punch down the dough, divide it into 12 equal pieces, and shape each into a smooth ball. Arrange the balls in the pan, cover, and let rise until puffy and nearly doubled, 30 to 45 minutes. (about 45 min)
- Heat the oven to 375°F. Melt the remaining 1 tablespoon butter and brush it over the risen rolls. (about 10 min) — 375°F
- Bake until the rolls are golden brown and sound hollow when tapped, 16 to 20 minutes. Their centers should reach about 190°F. Brush with a little additional melted butter if desired, cool for 10 minutes, and serve warm. (about 20 min) — 190°F
