Prep: 10 min · Cook: 25 min · Yield: 4 · Method: Stovetop
Ingredients
- 1 cup long-grain white rice
- 1.75 cups water
- 1 tablespoon olive oil
- 0.75 teaspoon salt
- 1 lime
- 0.5 cup fresh cilantro
Cooking instructions
- Rinse the rice in a fine-mesh strainer under cold water until the water runs mostly clear. Drain well. (about 3 min)
- Heat the olive oil in a medium saucepan over medium heat. Add the drained rice and cook, stirring, for 2 minutes, until the grains are lightly coated and smell nutty. (about 2 min) — Medium heat
- Add the water and salt. Bring to a boil, then stir once, cover, and reduce the heat to low. (about 5 min) — Low heat
- Simmer, covered, without lifting the lid, until the water is absorbed and the rice is tender, 15 to 18 minutes. (about 17 min) — Low heat
- Remove the saucepan from the heat and let the rice stand, covered, for 5 minutes. Fluff gently with a fork. (about 5 min)
- Finely grate the lime zest, then cut the lime in half and squeeze in 1 to 2 tablespoons of juice. Finely chop the cilantro. Fold the zest, lime juice, and cilantro into the rice, taste, and adjust the salt if needed. Serve warm. (about 3 min)
