Prep: 10 min · Cook: 15 min · Yield: 4 · Method: Stovetop
Ingredients
- 4 salmon fillets
- 1 tablespoon olive oil
- 1 teaspoon kosher salt
- 0.5 teaspoon black pepper
- 4 tablespoons unsalted butter
- 4 cloves garlic
- 1 lemon
- 2 tablespoons fresh parsley
- 0.25 cup chicken broth
Cooking instructions
- Pat the salmon dry. Season both sides with the salt and black pepper. (about 3 min)
- Heat the olive oil in a large skillet over medium-high heat. Place the salmon skin-side up and cook until golden and crisp, 4 to 5 minutes. (about 5 min) — Medium-high heat
- Flip the salmon and cook for 3 to 4 minutes, until the thickest part reaches 145°F or flakes easily with a fork. Transfer the fillets to a plate. (about 4 min) — Medium-high heat
- Reduce the heat to medium. Add the butter and minced garlic to the skillet; cook for 30 seconds, stirring, until fragrant. (about 1 min) — Medium heat
- Stir in the broth and the juice of half the lemon. Simmer for 1 to 2 minutes, scraping up any browned bits, until slightly reduced. (about 2 min) — Medium heat
- Return the salmon to the skillet and spoon the garlic butter sauce over it. Garnish with chopped parsley and lemon wedges from the remaining half of the lemon; serve immediately. (about 1 min) — Low heat
