Prep: 10 min · Cook: 25 min · Yield: 4 · Method: Stovetop
Ingredients
- 4 pork chops about 1 inch thick, bone-in
- 1 teaspoon kosher salt
- 0.5 teaspoon black pepper
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter
- 1 medium yellow onion
- 2 medium firm apples
- 1 teaspoon fresh thyme leaves
- 1 cup chicken broth
- 1 tablespoon apple cider vinegar
Cooking instructions
- Pat the pork chops dry. Season both sides with the salt and pepper. Thinly slice the onion and cut the apples into 1/2-inch wedges, discarding the cores. (about 5 min)
- Heat the olive oil in a large skillet over medium-high heat. Add the pork chops and sear until browned, about 3 to 4 minutes per side. Transfer them to a plate; they do not need to be fully cooked yet. (about 8 min) — Medium-high heat
- Reduce the heat to medium and add the butter. Add the onion and apples, then cook, stirring occasionally, until the onion softens and the apples begin to brown, about 5 minutes. (about 5 min) — Medium heat
- Stir in the thyme, chicken broth, and apple cider vinegar, scraping up any browned bits from the skillet. Return the pork chops and any juices to the pan. (about 2 min) — Medium heat
- Simmer gently until the sauce is slightly reduced and the pork reaches 145°F in the thickest part, about 5 to 7 minutes. Turn the chops once during cooking. (about 7 min) — Gentle simmer
- Rest the pork chops for 3 minutes, then spoon the apples, onions, and pan sauce over them before serving. (about 3 min)
